• Grilled and Roasted Veggies

    Baked veggies!Hi Oxygen fans,

    I’ve been on a bit of a veggie freakout lately so I’ve decided to share my insanity in hopes of inspiring you to go veggie crazy with me!

    On Friday I went to the market and bought a ton of different veggies to grill. I got lazy and cozy inside so I decided to bake them as Gunter and I watched a movie. They came out so good. It was the first time I’d baked carrots, they are amazing. I can’t believe I haven’t done this before! I’m really in to bok choy right now too. I usually steam it or cook it in a bit of broth, but it came out great baked. I just misted everything with olive oil and sea salt and tossed them in the oven at 450 for about 30 mins (except the carrots, they took forever!)

    On Sat. I cut up the leftover veggies and used them on a big salad, it literally took me 10 mins to make and it was better then any salad I’ve ever had in a restaurant!

    Veggie salad!The “veggie freakout” continued into Sunday. I poured a glass of wine and grilled another huge batch. I burnt the carrots to death, but everything else came out awesome. I even grilled green beans. Gunter just sat back with his glass of wine and was entertained by me digging in the fridge for every last veggie to grill! He laughed and said he was surprised I didn’t grill the house plants!

    One of the best things about summer is grilling. I hope you all are inspired to go grab a bunch of unique veggies and toss them on the grill. You’ll be surprised how quick, easy and yummy they are!
